Rockstar winemaker Justin Smith of Saxum Vineyards in Paso Robles, California, for his vision and values. He has an unadulterated passion for viticulture and massive respect for the environment, and the results are tangible.

WHAT HAS BEEN YOUR FUNNIEST MOMENT IN YOUR JOB?

It wasn't funny at the time, but falling into a tank of freshly pressed Grenache in Châteauneuf-du-Pape, and having to manoeuvre my wine-soaked self out of the slippery situation - in front of a large audience of importers.

WHAT IS YOUR FAVOURITE THING ABOUT YOUR JOB?

I have the rare opportunity to introduce humankind to Mother Nature by expressing the soul of a place in a consumable way. For that reason I need to challenge myself daily to remain in sync with our ever changing environment, which is a very exciting way to live.

WHAT IS YOUR DREAM HOLIDAY?

Just drop me in the middle of a mountain range, really. There is a certain amount of magic attached to getting lost in the mountains - mindfully exploring a space entirely untouched.

WHAT WAS YOUR GREATEST MOMENT?

Tough one. I cannot credit a specific moment, as I like to think of happiness as the accumulative function of many small moments / successes along the way.

Chef's Warehouse at Beau Constantia. I know, but I am not kidding...
